Yummy German Apple Pancake

This is a great crossover fruit and dessert recipe. Feel free to substitute other fruits for different flavors, Enjoy!

1.Heat oven to 425 degrees Fahrenheit. Peel and quarter 1-3 apple(s). Throw away core. Thinly slice the quarters.
In a small bowl mix 2 tablespoons of sugar and 1/4 teaspoon of cinnamon with a fork. Add the apple slices and mix well.




2. Slice 2 tablespoons butter into a few pieces and add the butter in a 9 or 10 inch glass pie pan. Put pan in oven for 2 minutes. Then remove from oven.

















3. Spread apples in pan with melted butter. Bake until the apples have softened and butter is bubbling and beginning to brown around edges. While cooking prepare step 4.














4. While apples are cooking, make batter in a large bowl. Add 3 eggs, 1/2 cup of room temperature milk, 1/2 cup of flour, 1/8 teaspoon of salt, 1/2 teaspoon of vanilla, and 1 tablespoon of sugar and 2/4 teaspoon of cinnamon in bowl. Mix batter with electric mixer till smooth and frothy, about 1 minute.
5. Carefully take apples out of oven with hot pads. Pour the batter over apples and bake until fluffy about 25 to 30 minutes. Let cool on a wire rack. Dust with powdered sugar and cut into wedges before serving.

1/2 cup of milk, at room temperature
1/2 cup flour
1/8 teaspoon salt
1/2 teaspoon vanilla extract
Powdered sugar for dusting

You may also use other fruits besides apples. Experiment!
